Carrot Cake & Cream Cheese Icing


1½ cups of Three Services Extra Virgin Olive Oil

1½ cups brown sugar


4 Eggs, teaspoon vanilla essence


2 cups self raising flour

1½ teaspoon cinnamon

1 teaspoon salt

3 cups grated carrot

1 cup chopped walnuts


At last minute add 2 teaspoons baking soda in a little water

Bake at 180°C for 55 minutes


Cream Cheese Icing

Beat together:  1 container of cream cheese, ½ cup icing sugar, 1 teaspoon vanilla essence, ¼ cup of melted butter
